Spicy garlic Chicken Cashew

This recipe is coming from Thailand and is one of the best meal for the expat community

Ingredients:
3 pounds chicken thighs
6 tbsp. cilantro chopped
1 cup cashew nuts
1/4 cup olive oil
3 tbsp. soy sauce
6 garlic cloves chopped
2 tsp. brown sugar
1 tsp. chilli powder
1 tbsp. lime juice
Salt and pepper to taste

Preparation

In a food processor put the cashews, oil, cilantro, soy sauce, garlic, brown sugar, chili powder, lime juice, and 2 tablespoons of water
Pulse until the mixture becomes a smooth paste
Add salt and pepper to taste
Take out 1/3 of the marinade you just did and set aside
Sprinkle the chicken thighs wiyh salt and pepper
Using the 2/3 of the marinade coat the chicken pieces
Then put in the fridge for at least several hours or even better for overnight to let it marinate
When you are ready to cook take out the chicken from the fridge to bring it to room temperature
Preheat the grill to medium heat
Grill the chicken 25 to 30 minutes, turning frequently, until golden and crisp (the juice should run clear (not pink) when cut into with a knife)
Serve with lime wedges and the reserved marinade
